Tomato Onion Eggs
Today’s clean eating recipe was my breakfast two days ago. After a few mornings of plain scrambled eggs, breakfast started feeling mundane. Looking through the produce drawer, I found one tomato and half a bushel of green onions. They were leftovers from a dinner salad, and I decided to put them to use. Outcome tasted pretty good, so I’m sharing the recipe today.
- 1 cup of green onions, diced
- 1 medium tomato, diced
- 2 eggs
- 1 tea sp. of coconut oil
- sea salt
- Heat frying pan.
- Add coconut oil.
- Add eggs, tomato and diced onion into pan.
- Add a pinch of sea salt.
- Scramble until eggs are fully cooked.
- Serve with a side of fruits and enjoy.
