After a few mornings of plain scrambled eggs, breakfast started feeling mundane. Looking through the produce drawer, I found one tomato and half a bushel of green onions. They were leftovers from a dinner salad, and I decided to put them to use. Outcome tasted pretty good, so I’m sharing the recipe today.

Ingredients:

  • 1 cup of green onions, diced
  • 1 medium tomato, diced
  • 2 eggs
  • 1 tea sp. of coconut oil
  • sea salt

Directions:

  1. Heat frying pan.
  2. Add coconut oil.
  3. Add eggs, tomato and diced onion into pan.
  4. Add a pinch of sea salt.
  5. Scramble until eggs are fully cooked.
  6. Serve with a side of fruits and enjoy.
