The bars contain cashews and almonds that offer heart-healthy monounsaturated fats, and dates that are rich in fiber, vitamins and minerals. Plus, they have hints of cocoa–and everyone likes that!

Healthy Snack Bars with Chocolate, Nuts and Dates

Ingredients:

– 2 cups of Medjool Dates, pitted and diced
– 1/2 cup of raw skinless almonds
– 2 cups of raw raw cashew
– 3/4 of organic dark cocoa powder
– Sea salt
– 3/4 cup of shredded coconut
– 2 tea spoons of real vanilla extract
– 3 table spoons of water

Directions:

1. Combine dates, nuts, cocoa powder, and sea salt in a food processor; and pulse all ingredients together until everything’s mixed well and texture’s coarse. (By the way, the Hamilton Beach Stack and Snap Food Processor is amazing!)
2. Add the shredded coconut and vanilla extract, pulse to mix.
3. Add a little water, pulse. Add a little more water, pulse. Repeat until content becomes moist.
4. Line an 8×8 baking pan with parchment paper. Scrape content from food processor into the pan, and press with your hands and then a rubber spatula.
5. Put pan inside a refrigerator and chill for an hour.

Cut into bar-sized pieces, and enjoy!
