Today’s healthy dessert recipe is a clean eating diet plan‘s m-u-s-t; because after a long work week, you deserve a treat!

Though healthy desserts are hard to come by, today’s fried plantain is easy to make, and fits perfectly into the clean eating diet plan. It’s flavorful with generous dashes of cinnamon, and creamy with light coconut milk. After being pan fried in extra virgin coconut oil, it also has a crispy bite.

If you like bananas, you’ll (most likely) like plantains.

Belonging to the same family as bananas do, the Genus Musa, plantains look like bananas, taste like bananas, and contain similar nutritional value as bananas do, but are larger, denser and less starchy.

Plantains are great sources for vitamins, dietary fiber, potassium and complex carbohydrates. Because of plantains’ dense embodiment and sweet nature, they can be used as a base for many recipes, including healthy desserts and snacks. They’re fairly easy to cook, and are often used to substitute grain. In fact, many paleo and gluten-free recipes incorporate plantains. They’re certainly nice ideas for the clean eating diet plan as well.

Today’s healthy dessert recipe encompasses delicious plantain and sweet coconut milk.

The combination creates quite a delectable flavor. The recipe is also quick and easy, requiring few ingredients. It’s worth a try, and I hope you like it!

Healthy Dessert Recipe: Fried Plantain in Coconut Milk

Ingredients:

– 1 ripe plantain

– 1/3 cup of light organic coconut milk (try Native Forrest Organic Coconut Milk Lite)

– 2 table spoons of virgin coconut oil (LOVE Trader Joe’s Organic Virgin Olive Oil! Apparently, so do almost 300 other Amazon customers.)

– 1 table spoon of cinnamon

– 1 table spoon of organic agave (try Wholesome Sweetener’s Organic Agave! It’s thick, naturally sweet and great for cooking. It also has rave reviews from other consumers on Amazon.)

Directions:

1) Peel and slice plantain.

2) In a mixing bowl, add plantain slices, cinnamon and agave. Gently mix with a spoon, then toss a few times. Ensure that cinnamon and agave evenly covers plantain slices.

3) Heat frying pan over stove top on high. Add coconut oil.

4) Wait for coconut oil to melt. Reduce heat to low-medium.

5) Add plantain slices. Use chopstix or tongs to evenly lay each plantain slice in pan.

6) Let cook on one side for 3-5 min. Flip each plantain slice with chopstix or tong.

7) Cook the other side for another 3-5 min.

8) Reduce heat to low. Add coconut milk. Let cook for about 2 minutes.

9) Splash a few extra pinches of cinnamon (optional).

Transfer to play. Enjoy!
