If so, then you might be interested in today’s clean eating recipe of cauliflower and Parmesan crusted chicken.

Instead of using bread as crust, this healthy chicken recipe uses a combination of grated cauliflower and Parmesan, which creates similar texture as a bread-y crust but won’t leave you feeling sick. Plus, vitamin- and antioxidant-rich cauliflower and calcium-full cheese provide extra nutrition.

The curry yogurt sauce, made with curry flavors and nonfat Greek yogurt, tastes fantastic with cauliflower and chicken. This healthy creamy sauce enhances flavor and gives the recipe an extra layer of “fun.”

The entire process takes about 45 minutes, which is good timing for an easy healthy week night dinner.

Healthy Chicken Recipe: Cauliflower and Parm Crusted Chicken with Curry Yogurt Sauce

Ingredients for Chicken:

– 1/2 head of cauliflower

– 1/2 cup of all natural grated Parmesan cheese

– 2 eggs

– Sea salt

– Ground black pepper

– 2 pieces of 4-ounce boneless organic chicken breast

– 1 table spoon of chopped green onion

Ingredients for Curry Yogurt Sauce:

– 1/4 cup of nonfat plain Greek yogurt

– 1 teaspoon of madras curry powder

– 1/2 teaspoon of ground ginger powder

– 1/2 teaspoon of ground cumin

– 1 table spoon of honey

– 1 tea spoon of agave nectar

Directions:

1. Preheat oven 350 F, and grease an 8X8 baking pan with olive oil spray.

2. Chop cauliflower into manageable pieces. Using a food processor, grate cauliflower.

3. Add Parmesan, sea salt, pepper and eggs, mix well. Set aside.

4. Slice chicken breast in half. Dip front and back in cauliflower and Parmesan mix. Lay each piece flat in baking pan. Pour rest of the cauliflower mix on top of each piece of chicken.

5. Bake for 20 – 25 minutes, or until chicken’s thoroughly cooked.

6. Meanwhile, add all ingredients for curry yogurt mix into a bowl, and whisk til’ smooth.

7. When chicken’s done, transfer pieces onto plate, and top with curry yogurt sauce.

8. Garnish with chopped green onion.
