A popular vegetable in the Clean Eating Diet Plan, yams offer vast nutritional benefits.

They are dense in vitamins, and especially in vitamin B6, which breaks down a property called homocysteine, a substance that directly damages blood vessel walls, and is associated with causing heart attack and stroke. Higher consumption of yam–and therefore increased intake of Vitamin B6–reduces the risk of heart attack and stroke, and induces cardiovascular health.

Yams are also abundant in potassium, a mineral that controls blood pressure and reduces the risk of hypertension; fiber and complex carbohydrates, which are weight-management agents; and manganese, a trace mineral that metabolizes carbohydrates into energy and antioxidant enzymes.

Because yams have solid texture, they make excellent substitutes for bread, exemplified in today’s open face sandwiches.

They are soft, chewy, completely natural, and easy-to-cook; and most of all, they taste incredible, especially with BBQ-flavored chicken.

Equipment Recommendation

Alright. Without further ado, here’s today’s delicious clean eating recipe:

Healthy Chicken Recipe: BBQ Chicken and Yam Open Face Sandwich

Ingredients:

– 1 med yam, peeled and sliced with 1/4 inch thickness

– 2 table spoons of extra virgin olive oil

– 1 tea spoon of dry thyme

– 1 tea spoon of dry basil

– 1 tea spoon of dry dill weed

– 1 pinch of sea salt

– 1 dash of white pepper powder

– 1/2 cup of diced white onion

– 1/2 fuji apple, peeled, de-cored and diced

– 2 cups of ready-made baked chicken with a mix of white and dark meat.

– 1/4 cup of organic BBQ sauce

** Our recommendation: Bill’s Best Organic BBQ Sauce

– 2 table spoons of green onion or chive, diced (optional)

Directions:

1. Preheat oven 350 F.

2. In a small bowl, add olive oil, thyme, basil, dill weed, sea salt and pepper. Mix well.

3. Dip yam slices in mix above, front and back. Lay on baking sheet. Bake for 15 minutes. Turn each yam slice over. Bake for another 15 minutes. Continue to bake until yam is thoroughly cooked.

4. Meanwhile, in the container of a food processor (we love the Cuisine Art DLC-10S Pro Classic 7-Cup Food Processor), add onion, apple and chicken, and pulse to chop. When content becomes finely-chopped, transfer to a mixing bowl and add organic BBQ sauce. Mix well.

5. When yam slices are cooked. Lay each piece flat on a plate, and top with a spoonful of the chicken mix from step 4.

6. Garnich with diced green onions or chives.
