Healthy Breakfast Option: Shrimp-Salmon-Cream Cheese Omelette

Ingredients

  • 5 medium cooked shrimp, shelled, deveined and diced
  • 2 ounces (4-5 slices) of cured salmon, diced
  • 1/4 cup of SLIGHTLY MELTED organic cream cheese (we recommend Organic Valley Pasteurized Cream Cheese.)
  • 1/4 cup of nonfat plain Greek Yogurt (Wallaby is a great choice!)
  • 3 eggs
  • 1/2 table spoon of real salted butter
  • 1 dash of sea salt
  • 1 dash of ground black pepper
  • 1 table spoon of fresh dill weed
  • 1 table spoon of organic milk

Instructions

  1. In a mixing bowl, add eggs, sea salt and pepper. Beat heavily for a minute or so. Set aside.
  2. In another mixing bowl, make filing by adding cream cheese, shrimp, salmon and Greek yogurt. Mix well by whipping with spoon.
  3. Over stove top, on medium heat, melt butter in pan or skillet. Tilt pan to coat entire surface. Pour in egg mix and let set for a few seconds.
  4. Using a spatula, gently push cooked edges toward middle with an inverted turn. Ensure all content are thoroughly cooked.
  5. Reduce heat to medium-low. Add filling to one half of the omelette. Spread evenly with spatula. Fold omelette in half, and gently press on top. Then, quickly flip, and gently press the other top.
  6. Transfer omelette onto a plate. Garnish with dill.
