Speaking of holiday parties…

I like throwing at least one get-together with friends and family. It’s nothing extravagant; just a small gathering with few loved ones and lots of food. The dishes are simple and healthy; and the guests are tightly-knit and down-to-earth.

Since starting clean eating, I’ve accumulated quite a collection of healthy snack ideas and good appetizers for parties.

They’re quick and easy–and of course nutritious.

Today’s Baked Zucchini is one of the healthy party snack ideas I’ve collected–and one I absolutely recommend. If you’re a zucchini fan with a liking for Mediterranean flavor, you’ll enjoy this delicious and healthy appetizer.

And if you’re not a zucchini fan, you’re missing out.

This low-calorie vegetable, with only 10 calories per serving, offers 295 grams of heart-healthy potassium per cup. That’s 8 percent of your daily recommended value of potassium per day! Healthy Appetizer for Clean Eating: Baked Zucchini with Garlic, Tomato and Parmesan

Ingredients:

– 1 zucchini, peeled and sliced

– 3 Roma tomatoes, cut into stackable slices

– 3 table spoons of all-natural grated Parmesan cheese (I recommend Organic Valley Shredded Parmesan)

– Sea salt

– Freshly ground black pepper

– Organic olive oil cooking spray

– 5-6 cloves of garlic, crushed or chopped

– 1 table spoon of extra virgin olive oil

– 1 table spoon of organic balsamic vinegar

– Dry thyme, oregano or your choice of herbs

Directions:

1. Preheat oven at 350 F.

2. Spray cookie sheet with cooking spray.

3. Lay zucchini slices on cookie sheet, and keep them an inch apart from each other, and sprinkle each slice with Parmesan.

4. When oven is preheated, put cookie sheet in, and bake for 10 minutes.

5. Meanwhile, heat pan on stove top at high. Add olive oil.

6. Add garlic, tomato, balsamic vinegar, sea salt and pepper and dry herbs, and cook for about 3-5 minutes. (Don’t forget to flip the tomato slices!)

7. Take cookie sheet out of oven, when zucchinni’s ready, and layer tomato slice and garlic on each zucchini slice. (Leave out garlic if you dislike too much garlic-y flavor.)

Done. Enjoy!
