Clean Eating Recipe – Curry Deviled Eggs

Ingredients

  • 5 cage-free eggs
  • 2 table spoons of organic mayo, or mayo with olive oil
  • 1 pinch of sea salt
  • 1 tea spoon of madras curry
  • 1 tea spoon of extra virgin olive oil
  • 1 tea spoon of garlic, minced
  • 1 tea spoon of paprika

Instructions

  1. Boil eggs. Let them cool after they're cooked. Peel shells.
  2. Cut each egg in half. Lay whites on plate. Put yolks in a bowl.
  3. Add mayo, curry powder and sea salt to egg yolks. Set aside.
  4. Heat a small frying pan on high. Add olive oil.
  5. When oil is hot, add minced garlic. Let cook for 30 seconds to 1 minute, until garlic is golden on the outside.
  6. Add garlic in oil to egg yolks.
  7. Mix and mash yolks and ingredients until mixture is smooth.
  8. Fill each egg half with mashed yolk.
  9. Splash paprika on top and serve.
