Clean Eating Dinner – Cucumber Egg Stir Fry

Ingredients

  • 1/2 cup of onions, diced
  • 1/2 cup of cooked sweet peas
  • 1 cup of cucumber, diced
  • 5 eggs
  • 1 table spoon of extra virgin olive oil
  • 1 pinch of sea salt
  • 1 dash of black pepper powder
  • 1 splash of paprika
  • 1/2 table spoon of naturally brewed lite soy sauce

Instructions

  1. In a mixing bowl, crack eggs. Add a pinch of sea salt and pepper, and whisk well.
  2. Heat wok on high. Add olive oil.
  3. Add onions, peas and cucumber. Then add soy sauce. Stir fry for 1 minute.
  4. Add eggs. Add paprika.
  5. Stir fry for 3 minutes more.
  6. Done. Serve with a side of organic brown rice or quinoa.

Cucumber and egg stir fry is a popular Chinese family dish. My Grandmother made it for us every week, but of course, back then, I had no idea what clean eating was. (Actually, clean eating wasn’t even a word at the time.) My Grandmother was always healthy though–she grew her own fruits and vegetables, raised her own chickens, and purchased fresh everyday from the daily farmer’s market down the road. Needless to say, her good habits rubbed off on me.

Cooking–and eating–this clean eating recipe certainly brought back memories. I hope you enjoyed today’s cucumber and egg stir fry as much as I did.
