Clean Eating Dinner – Thai Black Rice Stir Fry

Ingredients

  • 1 serving of organic Thai black rice, cooked
  • 1 cup of broccoli, heads only
  • 1/4 cup of green onions, diced
  • 1 egg
  • 1 table spoon of organic coconut oil
  • 1 pinch of black pepper powder
  • 1/2 tea spoon of smoked paprika
  • 1 tea spoon of vegetable oyster sauce
  • 1/2 tea spoon of naturally-brewed lite soy sauce
  • 2 tea spoons of organic agave nectar

Instructions

  1. In a small bowl, pour in oyster sauce, agave and soy sauce. Add a dash of pepper powder and mix well. Set marinade aside.
  2. In another small bowl, crack egg. Add paprika. Whisk well.
  3. Blanch broccoli in boiling water. Set aside.
  4. Heat wok or pan on high. Add coconut oil.
  5. When oil becomes hot, add egg. Stir and cook until egg is done.
  6. Add broccoli. Add onion. Stir and cook for a few minutes.
  7. Now add Thai black rice. Stir heavily for 1 minute.
  8. Add pre-made marinade.
  9. Stir for another 2-3 minutes.
  10. Reduce heat to medium, and let cook for another 5 minutes. Stir occasionally (every 10 seconds or so.)
  11. Done.

Thai black rice, or forbidden rice, contain many nutritional values. It is known for having high antioxidants and is claimed to benefit kidneys, stomach and liver. Its nutritional benefits are comparative to those of brown rice.

Thai black rice is a glutenous grain, with sticky texture and nutty flavor. It also has a natural sweetness. It’s often served as dessert, but can also be used in main entrees.

Personally, I enjoy its sweet taste, as well as its nutty and wholesome flavor.

Today’s clean eating recipe is a very traditional way to stir fry rice. I like how simple this recipe is, and L-O-V-E how it’s absolutely savory. I hope you like it too.
