Clean Eating Recipe – Tuna Parm Tomato Melt

Clean Eating Recipe – Tuna Parm Tomato Melt

Ingredients

  • 1 can of solid white tuna in water (I prefer Trader Joe's Albacore Solid White Tuna in Water Half Salt)
  • 1/4 cup of tomato, diced
  • 1/4 cup of onion, diced
  • 1/2 cup of freshly grated Parmesan cheese
  • 1/2 table spoon of real butter (or extra virgin olive oil)
  • 1 dash of ground black pepper
  • 1 table spoon of real mayo made with olive oil (try this one by Hellman's here - it's awesome!)

Instructions

  1. Drain tuna.
  2. In a large bowl, add tuna, mayo, tomato, onion and pepper. Mix well.
  3. Heat frying pan on med-high. Add butter.
  4. When butter melts, add tuna mix, and cook for about 1 minute.
  5. Flip mix over, and cook for another minute.
  6. Turn heat down to low-med.
  7. Top with Parmesan cheese.
  8. Cook for another minute or two, or until cheese melts.
  9. Lay on top of a slice of freshly-baked Artisan whole grain bread.
  10. Enjoy!
