Clean Eating Recipe – Cucumber and Chicken Salad

Clean Eating Recipe – Cucumber and Chicken Salad

Ingredients

  • 2 cups of cucumber, diced
  • 1 cup of baked all-natural chicken breast, chopped
  • 1/2 cup of green onion, diced
  • 1/2 table spoon of extra virgin olive oil
  • 11/2 table spoons of Greek yogurt salad dressing (Mine is Opa Brand Greek yogurt salad dressing in "Feta Dill" flavor - seen in picture above)

Instructions

  1. Heat frying pan on high, add olive oil.
  2. When oil gets hot (in about 1 min), turn heat down to low-med.
  3. Add green onion.
  4. Let cook until onion are cooked, with a golden tint. Set aside.
  5. In a mixing bowl, add cucumber, chicken and salad dressing.
  6. Then add cooked green onion.
  7. Mix well. Serve.

 

This clean eating recipe was light and delicious. If you can’t find “feta dill” flavor, any Greek yogurt dressing will do. You can add dill separately.
