Clean Eating Recipe – Chicken, Zucchini and Parmesan Melt

Clean Eating Recipe – Chicken, Zucchini and Parmesan Melt

Ingredients

  • 3 cups of zucchini, sliced
  • 2 cups of cooked organic chicken breast, diced
  • 1 tea spoon of minced garlic
  • 2 table spoons of extra virgin olive oil, separated (1 table spoon for stir fry; the rest for baking)
  • 1 pinch of sea salt
  • 1 pinch of fresh ground black pepper
  • 1 pinch of dry thyme (or an herb of your choice)
  • 1/4 cup of fresh grated Parmesan cheese

Instructions

  1. Preheat oven to 350 F.
  2. Grease baking pan with 1 table spoon of olive oil.
  3. On stove top, heat frying pan on high, add the other table spoon of olive oil.
  4. Add minced garlic. Turn heat down to med-high.
  5. When garlic gets a little golden, add zucchini.
  6. Add sea salt, pepper and thyme.
  7. Stir fry for about 3 - 5 min. Or until zucchini's cooked.
  8. Turn heat down to med. Let zucchini simmer for about 2 min.
  9. (Add a little water if you must. Stir occasionally.)
  10. Add chicken. Stir and cook for another minute.
  11. You're done with the stir fry part of this recipe.
  12. Pour everything into baking dish.
  13. Spread Parmesan cheese evenly on top of stir fry.
  14. Bake for 5 minutes.
  15. Done.
