Clean Eating Recipe – Chicken, Blue Cheese and Date Stack

Ingredients

  • 1 cooked organic chicken breast, preferably lightly-seasoned and baked, sliced into 8 - 10 thin and bite-sized pieces
  • 4 - 5 pitted dates, halved
  • 1/2 cup of all-natural blue cheese crumbles
  • 1 table spoon of extra virgin olive oil (to oil baking sheet)
  • 2 table spoons of extra virgin olive oil (for chicken)

Instructions

  1. Add sliced chicken into a mixing bowl.
  2. Pour 2 table spoons of olive oil in. Mix with chicken.
  3. Preheat oven to 350 F.
  4. Oil baking sheet with 1 table spoon of olive oil.
  5. Lay chicken pieces on baking sheet. Leave plenty of space between chicken slices.
  6. Use a small spoon and top each chicken slice with a small amount of blue cheese.
  7. Then top each piece of chicken with date half.
  8. Bake for 5 minutes. (Or until blue cheese is melted.)

This is such a simple yet delicious clean eating recipe. It can be enjoyed as a healthy snack, appetizer, lunch or dinner. I loved this recipe, and hope you enjoy it too.
