Clean Eating Dinner Recipe – Stir Fry Eggs and Tomato

clean eating dinner recipeclean eating dinner recipeclean eating dinner recipeToday’s clean eating recipe is a traditional Chinese dinner recipe my family make all the time. I varied it by using organic products and coconut oil. It actually tastes better now. Hope you like it.

Ingredients:

  • 3 – 4 cage-free eggs, scrambled with coconut oil
  • 1 large tomato, cubed
  • 1/4 cup of green onion, diced
  • 1 tbl. sp of organic ketch up
  • 1 tea sp. of organic coconut oil
  • 1 tea sp. of soy sauce
  • 1 tea sp. of dark vinegar
  • All-natural cane sugar

Directions:

  1. Heat coconut oil in a frying pan on high.
  2. Add green onion, and cook until they are a little golden.
  3. Reduce heat to med-high.
  4. Add tomato. Cook until cubes are golden on the outside. Stir often. (This takes about 3-5 minutes.)
  5. Add soy sauce, vinegar and a pinch of sugar. Stir.
  6. Add eggs.
  7. Add ketch up.
  8. Stir and cook for another 2 minutes or so.
  9. Done.
  10. Serve over a bed of brown rice and enjoy.
