Clean Eating Dinner Recipe – Chinese Leeks and Eggs

clean eating dinner recipe 1clean eating dinner recipe 3Leeks have a grassy taste that’s strong, wholesome and a little bit sweet. It’s one of my favorite vegetables to stir fry with. I hope you like it too.

Ingredients:

  • 1 bushel of Chinese leeks
  • 2 eggs
  • 1 tbl sp of cooking oil
  • sea salt

Directions:

  1. Dice leeks at desired length.
  2. Scramble eggs. Set aside.
  3. Heat wok on high, add cooking oil.
  4. Pour in leeks, and stir with spatula.
  5. When leeks are cooked (takes about 5 minutes), add eggs.
  6. Add a dash of sea salt for taste.
  7. Stir for 2-3 more minutes.
  8. Done.
