Clean Eating Dessert – Baked Plantain with Nut Butter

Ingredients

  • 1 plantain, halved
  • 2 table spoons of all natural peanut or almond butter (I recommend Wild Friends Nut Butter)
  • 1/2 cup of roasted walnuts and almonds, crushed
  • 1 dash of cinnamon

Instructions

  1. Preheat oven to 350 F.
  2. Place plantain halves flat side up on a baking sheet.
  3. Top plantain with nut butter and crushed nuts.
  4. Bake for 5 min.
  5. Splash cinnamon all over.

 

This clean eating recipe made a great dessert. Even my kids liked it. It could also be served as breakfast or a simple snack.
